Samosas are crispy, savory pastries filled with spiced potatoes, peas, and onions. Here's a simple recipe:

Ingredients:

For the dough:

2 cups all-purpose flour
1 teaspoon salt
1/4 teaspoon baking powder
1/4 cup ghee or oil
1/2 cup lukewarm water

For the filling:

2 large potatoes, boiled and mashed
1 cup peas
1 onion, chopped
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon garam masala
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
Salt, to taste
2 tablespoons lemon juice

Instructions:

Dough:

1. Mix flour, salt, and baking powder.
2. Add ghee or oil and lukewarm water. Knead dough.
3. Rest dough for 30 minutes.

Filling:

1. Heat oil in a pan.
2. Add cumin seeds and let them sizzle.
3. Add onion, peas, coriander powder, garam masala, turmeric powder, and red chili powder. Saute until onion is translucent.
4. Add mashed potatoes, salt, and lemon juice. Mix well.

Assembly:

1. Divide dough into 8-10 portions.
2. Roll out each portion into a thin circle.
3. Place 1-2 tablespoons of filling in the center.
4. Fold dough into a triangle or cone shape. Seal edges.
5. Fry samosas until golden brown.

3. Brush with oil.
4. Bake for 15-20 minutes or until crispy.

Tips:

Use the right type of flour (all-purpose or maida).
Adjust filling spice level to your taste.
Add other ingredients like carrots or cauliflower.

Punjabi-style: Add kasoori methi and ghee.
