This Youtube channel features a recipe for classic florentines. The recipe writer, Mark Hix, describes how florentines were often made in a large rectangle on a baking tray and cut into squares, with the trimmings available for snacking. The recipe calls for butter, demerara sugar, golden syrup, plain flour, glacé cherries, candied peel, whole almonds, and 70% plain chocolate. The butter, sugar, and syrup are heated until the butter melts, then the flour, fruit, and nuts are stirred in. Teaspoonfuls of the mixture are spooned onto baking trays and baked until golden. After cooling, the florentines are flipped over and melted chocolate is spread on the flat sides using a silicone pastry brush or spoon. The chocolate can be swirled to create a pattern. The florentines are left to set and can be stored in an airtight container for up to 10 days.
