sheekh kabab spice mixture:
1 Table spoon whole cumin
1/2 Table spoon shah jeera
10-12 pieces cardamoms
1 Tea spoon cubeb ( kabab chini )
2 black cardamoms
1 Tea spoon cloves
6 pieces big size ( 2 inches ) cinnamon
1/4th of one nutmeg
3 pieces mace (1.5 inches size)
1 Tea spoon fennel seed ( mouri / mishti jeera)
1/2 Table spoon black pepper and white pepper mixed

fry for few minutes (maximum 3 minutes) and make a fine powder

Ingredients to marinate the meat
2 KG thinly sliced stripe cut
2 Table spoon ginger juice
1 Table spoon red chilli powder
4 Table spoon kabab spice mixture
4 Tea spoon poppy seed paste ( posto dana )
2 Table spoon raw papaya paste
2 Tea spoon tasting salt
1/2 cup plain thick yogurt
1/4 tea spoon egg yellow color / food color
1/2 cup mustard oil
1/2 cup cooking oil
1 Table spoon salt or as required
1/2 cup gram flour
