Rice and peas Recipe
500 g rice
60g butter
3to4 spring onion
1\2 white onion
3g thyme
2 can coconut milk / 1 fresh coconut milk
2 can kidney peas
4 to 6 pimento seeds
2 clove garlic
1 to 2 cup water
1 scotch bonnet pepper


Oxtail recipe

1kg oxtail
4 Clove garlic
2 medium onion
1 piece ginger
1 tbsp garlic granules
1/2 of each green and ripe scotch bonnet pepper
2tbsp oxtail seasoning
1 tbsp all purpose
1 Tsp Adobo season
1 Tsp chilli powder
1 Tsp paprika
4 pimento seeds
3 sprigs thyme
Green season blend
1 green and yellow bell pepper
3 spring onion


Curry goat

1 kg goat meat
2 tbsp green season
1 tbsp curry powder
1 tbsp curry goat seasoning
1 tbsp lamb seasoning
1 tbsp all purpose seasoning
1 Tsp garlic powder
1 tbsp paprika
Cracked black pepper
2 carrots
2 potatoes
1 large onion
1 thumb of ginger
2 cloves garlic
25 to ml rum

Cover and marinate over night



Green seasoning
3 spring onion
2 to 3 onion
1 head of garlic
1 stick celery
12 sprigs of thyme
1 sprig of Rosemary
1 red bel pepper
2 green
2o to 30 g parsley
10 g coriander
20 g basil
10 to 15 g ginger
1 Tsp all spice
1 to 2 scotch bonnet pepper
1 chicken stock cube (optional )
1/2 maggi cube (optional)
Splash of oil or water
To help with the blending.
