Yuca or Cassava or Tapioca root they all mean the same thing - it is a starchy vegetable that is quite popular in Latin American and in Kerala (Indian) cuisine. Mashed yuca or kappa is a tasty dish that goes great with fish curry/chicken curry/ beef curry. In this video I show how to cut yuca root as well as how to make kerala style mashed yucca.
Full Recipe for mashed yucca:
1 tbsp coconut oil
1 tsp mustard seeds
2 tbsp chopped red onions or pearl onions
1/2 tsp fresh ginger chopped
1/2 tsp fresh garlic chopped
2 green chillies chopped finely
5-6 fresh curry leaves
1/2 tsp turmeric powder
2 cups cooked yucca pieces
1 tbsp freshly grated coconut (or frozen grated coconut, thawed)
Method: Heat a pan with the coconut oil. When hot add the mustard seeds. When they splutter, add the onion, ginger, garlic, green chillies and curry leaves. Saute for 2 mins and then add turmeric and sauce for 30 secs. Then add boiled yucca pieces along with some water. Mix well and turn heat off. Mash using a masher to make a smooth mixture. Add the grated coconut and mix. Enjoy with any curry!
