Mac n Cheese 🧀🔥🤤

✨ Ingredients:
Noodles of choice (chicken broth for boiling optional)
Butter
Black Pepper
Italian Seasoning
Smoked Paprika
Garlic Powder
Salt
3 tbsp Flour
Evaporated Milk
Heavy Cream
1 tbsp Dijon Mustard
1 lb Mozzarella
1 lb Colby Jack
1/2 lb Sharp Cheddar
Parsley (for garnishing)

✨ Prep Noodles:

1. Boil noodles in chicken broth mixed with water. Remove. Strain. Do NOT rinse, add to a bowl immediately.

2. Add 3 tbsp butter to the noodles and mix. Season with black pepper, Italian seasoning, smoked paprika, garlic powder, and salt. Mix until well coated. Taste a noodle, and if you like the flavor they’re perfect!

✨ Roux / Cheese Sauce:

1. Over low heat add 3 tbsp butter to a pan. Once melted and in the same exact seasonings used to season the noodles. Mix until seasoning and butter is well combined.

2. Add 3 tbsp flour, mix immediately! Continue to mix until there are no more clumps and flour is completely combined with butter. Make sure heat is low so flour doesn’t burn!

3. Add 1 can of evaporated milk. Whisk immediately. At this point you can increase heat a little keep it between low-medium. Next add 2 cups of heavy cream. Whisk. Add extra seasonings & 1 tbsp dijon mustard. Whisk.

4. Have all cheeses combined in a bowl and ready for use. For the sauce we will use half of the shredded cheese mixture. Slowly add in cheese and whisk until melted, then add in more and whisk until melted. Slowly adding it in will ensure it melts properly. Once sauce is ready, it’s times to put everything together.

✨ Bake (Preheat oven to 350 degrees):

1. Add noodles in an oven safe pan. Pour cheese sauce on top. Mix. Add some of the shredded cheese mixture and mix. Then layer the top with cheese. Sprinkle the top with smoked paprika.

2. Put in the oven for about 25 minutes until the top of the cheese is golden brown.

3. Take out the oven. Sprinkle with parsley. And let sit for a bit before serving so it holds its shape.
