*Ingredients:*


For the Gravy:
2 large onions, finely chopped
2 tomatoes, finely chopped
2-3 green chilies, slit
1 tablespoon ginger-garlic paste
1/2 cup yogurt (curd)
1/2 cup cashew nuts, soaked in warm water
1/2 cup fresh cream
2 teaspoons red chili powder
1 teaspoon turmeric powder
1 teaspoon garam masala
1 teaspoon cumin powder
1 teaspoon coriander powder
Salt to taste
Oil or ghee for cooking
Fresh coriander leaves for garnish

*Instructions:*

1. *Boil the Eggs:*
Boil the eggs until they are hard-boiled. Once done, peel the eggs and set them aside.

2. *Prepare the Cashew Paste:*
Grind the soaked cashew nuts into a smooth paste using a little water. Set aside.

3. *Make the Gravy:*
Heat oil or ghee in a deep pan or kadai. Add the finely chopped onions and sauté until they turn golden brown.

Add the ginger-garlic paste and slit green chilies. Sauté for a couple of minutes until the raw smell disappears.

Add the chopped tomatoes and cook until they become soft and mushy.

Add the spice powders: red chili powder, turmeric powder, garam masala, cumin powder, and coriander powder. Sauté for a few minutes until the oil starts to separate from the masala.

Add the yogurt and cook on low heat until the oil separates again.

Now, add the cashew paste and cook for a few more minutes. The gravy should turn thick and creamy.

4. *Add the Eggs:*
Add the boiled eggs to the gravy and coat them well with the masala. Let them cook for a few minutes.

5. *Dum Cooking:*
Place a tight-fitting lid on the pan and cook the curry on low heat (dum) for about 10-15 minutes. This allows the flavors to meld together.

6. *Finish with Fresh Cream:*
After dum cooking, add the fresh cream and stir well. Cook for a few more minutes.

7. *Adjust Seasoning:*
Taste the curry and adjust the salt and spice levels according to your preference.
