Noon chai, also called shir chai, gulabi chai, Kashmiri tea or pink tea, is a traditional tea beverage, originating from the Kashmir Valley, made with gunpowder tea (green tea leaves rolled into small balls), milk and baking soda.

The word noon means 'salt' in several languages such as Kashmiri, Bengali, Rajasthani, Hindi and Nepali. It is used in several other terms, such as the noon-dab ("salt promise") custom of Rajasthan, where a hand is dipped in salt to signify a solemn promise.

Noon chai is usually served at breakfast time in Kashmir Valley. People prefer to take tea instead of taking any fruit or vegetable for breakfast. Kashmiri bread is served along with the tea and with butter also.

“Ingredients, Recipe & Step by Step Method”

Prepare all the ingredients

Step 1…….
Make kahwa……

Green Tea - 3 tablespoon
Cold Water - 3 cup
Cardamom - 5 pieces
Star anise - 1 piece
Cinnamon stick - small piece
Salt - quarter teaspoon
Baking soda - half teaspoon

Method….
In a pan add water , green tea, cardamom, star anise and cinnamon stick
Boil the water
Mix well
Add salt and baking soda
Bring to boil
Beat the tea to infuse air to tea
Reduce to 1 cup

Step 2
Second step in KAHWA …..

Cold water - 2 cup

Method

Add cold water to the tea
Bring to boil
Beat the tea to infuse air to tea
Reduce to 1 cup

Step 3 ……..
Third and final step to make KAHWA

Cold water- 2 cup

Method

Add cold water to the tea
Bring to boil
Beat the tea to infuse air to tea
Reduce to 1 cup
Remove from heat
Strain the tea
Set aside
Cool it down
KAHWA is ready

Step 4
Make Tea…..

Milk 2 cup
Pistachio- 10 pieces
Almonds - 10 pieces
Milk powder - 2 tablespoon
Sugar - 1 tablespoon
Condensed milk - 1 tablespoon

Method ….

Slice pistachio and almonds
In a pan add milk
Add pistachio and almonds
Add milk powder
Bring to boil
Beat the milk
Add sugar
Add condensed milk

Add KAHWA to the milk
Beat the tea……

Note&Tips..........
. Use ice cold water
. Add ice cold water in every step for better colour
. Reduce the tea
. Follow all the steps
. Beat tea continuously for better taste
. Infusing air by beating the tea makes the tea more flavourful.
