Oven Baked Jollof Recipe
▪️Jollof Stew Base Ingredients ( 5 Tomatoes, 2 Onions, Pepper, Green Pepper, 4 Cloves of garlic, 1 thumb size ginger, 1 bay leaf, 1 tsp Aniseed, 1 tsp coriander, 1 tsp black pepper, 1 tsp rosemary, 2 calabash Nutmeg, Oil )
▪️Oven Grill Vegetables @ 210C x 30mins
▪️Sauté diced Onion and 2 bay leaves, add 11/2 ladle scoop tomato paste (cook 5mins), Add Blended Vegetables, Season with curry powder, salt, stock cube and any preferred seasoning.
( Cook for 25 mins)
▪️Add enough stew to washed rice, add goat meat stock, Oven Bake Jollof @210C x 45 mins. Fluff Rice and Bake for an additional 20 mins x 180C
Peppered Goat Meat Recipe
▪️ Season Goat Meat with 5 cloves of Garlic, thumb size ginger, 1/2 tsp black pepper, 1 tsp rosemary, 1 tsp aniseed, onion, green pepper, 1 tbs Curry Powder, salt, stock cube, prefered seasoning
▪️Cook Goat meat till tender, deep fry till golden brown
▪️Cook blended onion and pepper with salt and stock cube (3 mins) Add fried goat meat, Vegetables ( Carrot, green pepper, onion). Stir fry for 5 mins.
