A warming and filling classic Shepherds Pie with a twist! The twist is here I used Pork Mince instead of traditional Lamb. Enjoy! - Jonalyn

SERVES: 4 | PREPARATION TIME: 10 MINUTES | COOKING TIME: 60 MINUTES

::: Ingredients:::
1 cup Carrots
1 cup Celery
Thyme sprigs
5-6 Large Potatoes (chopped)
5 tbsp Butter
1 large Onion (chopped)
1-2 cup grated cheddar cheese
500g Minced pork
Tomato paste
1 Tinned tomatoes
Olive oil
Salt and pepper
Cayenne pepper
1/8 cup Red wine
Garlic powder
3 tbsp Milk

Method :::

1.) Heat the pan over medium high heat then add olive oil. When the oil has been heated up, add the onions, carrots and celery and cook for 5 minutes.

2.) Add the thyme sprigs

3.) Add the minced pork, and break it apart with a wooden spoon.
Cook for 6-8 minutes until the meat is browned.

4.) Add the tomato sauce and tomato paste

5.) And season with salt and pepper.

6.) Then pour red wine and add cayenne pepper if you want it to be spicy.

7.) Put the lid on, lower the fire and simmer for about 5 minutes to evaporate the wine off.

8.) While waiting for the sauce, make the potato topping;

9.) Place the potatoes in a pot with water then bring the water to a boil. Cook the potatoes until fork tender for about 10-15 minutes.

10.) Check the sauce if it needs more seasoning, I’ve added garlic powder to make it more tasty. You can always add more herbs, or salt and pepper. ( It’s okay not to follow the quantity of all the ingredients because It always depends on your taste. So, always remember that! )

11.) The leaves on the sprig of thyme will fall off during the cooking process so don’t forget to remove the stems out.

12.) When the potatoes are ready, drain them in a colander and put them back to the pot and let it rest for 1 minute to evaporate any remaining liquid.

13.) Add butter, half of the cheese, milk, salt and pepper.

14.) Mash the potatoes and stir until all the ingredients are mixed together.

15.) Transfer the meat mixture into your prepared baking dish. Spread it out into an even layer. Then spoon the mashed potatoes on top of the meat. Carefully spread into an even layer.

16.) Finish with the remaining Cheddar cheese.

17.) Bake uncovered for 25-30 minutes.
