Here's a recipe for loaded fries:

Ingredients:

- 2 pounds potatoes, cut into French fry strips
- 1/2 cup vegetable oil
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced cooked bacon
- 1/4 cup diced onion
- 1/4 cup diced tomato
- 2 tablespoons sour cream
- 1 tablespoon chives or scallions, chopped
- Salt and pepper to taste
- Optional toppings: diced ham, diced bell peppers, jalapeños, or broccoli

Instructions:

1. Heat oil in a deep frying pan to 350°F. Fry potatoes in batches until golden brown, about 3-4 minutes. Drain excess oil.
2. In a separate pan, cook bacon until crispy. Remove from heat and set aside.
3. In a large bowl, combine fried potatoes, shredded cheese, diced bacon, onion, tomato, sour cream, and chives. Mix well.
4. Season with salt and pepper to taste.
5. Transfer loaded fries to a serving dish or individual plates. Add optional toppings if desired.
6. Serve immediately and enjoy!
