Here’s a simple recipe for making Vapa Sandesh (Steamed Sandesh), a traditional Bengali sweet:

Ingredients:

Fresh chhena (paneer) - 1 cup

Powdered sugar or jaggery - 1/2 cup (adjust to taste)

Cardamom powder - 1/4 teaspoon

A pinch of salt

Ghee - 1 teaspoon (for greasing)

Milk - 2–3 tablespoons (if needed)

Optional garnish: chopped pistachios, almonds, or saffron strands

Instructions:

1. Prepare the Mixture:

Take the fresh chhena in a bowl and knead it for 5–7 minutes until smooth and lump-free.

Add powdered sugar (or grated jaggery), cardamom powder, and a pinch of salt. Mix well until everything combines into a smooth dough.

If the mixture feels too dry, add 2–3 tablespoons of milk to achieve a soft consistency.



2. Shape the Sandesh:

Grease small molds or bowls with ghee. Alternatively, you can shape the mixture into small flat discs or any desired shape by hand.



3. Steam the Sandesh:

Place the shaped sandesh pieces in a steamer or on a plate inside a large pot with water for steaming.

Cover the pot and steam for about 10–12 minutes on medium heat.



4. Cool and Garnish:

Once done, let the sandesh cool completely.

Garnish with chopped nuts or saffron strands for extra flavor and visual appeal.



5. Serve:

Serve Vapa Sandesh as a dessert or as part of a festive meal. It tastes best when slightly warm or at room temperature.
