RECIPE!

Ingredients

Rice:
3 Mugs of Sella Basmati Rice - thoroughly washed and soaked for 1hr
1/2 Cup Sunflower Oil
1 Onion, chopped
1 Garlic and Ginger cube (1tsp each fresh)
2tbsp Xawaash Bariis (Rice seasoning mix)
2tbsp Chicken Stock powder (can use universal vegetable seasoning instead)
3 mugs of boiling water

Beef:
350g Boneless Cubed Beef
1/4 cup Sunflower oil
1 Onion, chopped
1 Garlic and Ginger cube (1tsp each fresh)
1 Potato, chopped
1 Carrot, chopped
1 Bell pepper, chopped (I used a mix of 3 colours)
2tsp Curry powder
1/2 tsp crushed black pepper
1tsp vegetable seasoning
1tsp Chicken stock powder
1/2tsp dried parsley

Method:

Soak your rice in a large bowl filled with cold water for an hour, and then rinse well until the water runs clear.

Place large pan on medium heat and add in oil.
Add the chopped onion, and let it brown for a few minutes, and then add in your ginger and garlic, followed by your seasonings (rice mix and chicken stock)

Add your strained rice, stir well, and add in 3 mugs of freshly boiled water. Turn the heat up to high. Once the water starts to boil, turn the heat as low as you can and cover with a well fitting lid.

After 10mins, stir the rice to ensure everything is well mixed, and replace the lid. After another 10mins, turn off the heat and fluff the rice up with a fork.

Beef:

Peel and chop the onion, potato, carrot, and bell pepper.

Add your oil to a medium sized pan on a medium heat. Add in the cubed beef, and 1tsp of chicken stock powder. Cook the beef on medium-high for 10mins until all the juice evaporates, and the oil looks fairly clear.
Reduce heat to medium, and add your chopped onion, as well as your garlic and ginger, and stir well.
Add in the potato and carrot, turn the heat down to low, and place a lid on it.
Remove the lid after 8mins, and add in your curry powder, vegetable seasoning, black pepper, and your chopped peppers.
Turn the heat up to medium and allow to cook for 5mins.
After the 5mins, add in your water and stir the pot really well ensuring you scrape down the sides.
Replace the lid, turn the heat down to low, and leave to cook for 10-15mins until the vegetables are fully cooked. Stir in some dried parsley and allow the water to reduce down to your desired saucy-ness!
