Recipe:
Lemon Aioli
1 egg yolk
1 garlic clove, microplaned
zest of 1/2 lemon
2 tsp fresh lemon juice, I added a bit more because I love the acidity
1/2 tsp kosher salt
1/2 cup grapeseed oil, I also added a bit more because I wanted it thicker.

Prawn Mousse
2 garlic cloves, peeled
8 oz or 225 grams cleaned shrimp
2 tbsp egg whites
1/2 tsp sesame oil
1/4 tsp light soy sauce
1/2 tsp cornstarch
2 tbsp finely diced uncooked bacon
2 tbsp finely diced jicama
2 tbsp thinly sliced green onions
2 tsp peeled and minced ginger

1/4c or 30g raw white sesame seeds
milk bread
2 tbsp oil for frying
1 tbsp tobikko, cookbook says smoked trout roe or caviar but we ain't rich like that.

I used cilantro for garnish because it's what I had :)
