Preparation Time: 2 Mins

Cooking Time: 5 minutes
Servings – 3

Ingredients:

Puffed Rice / Murmura - 4 Cups
Water - Soak them for about 2 – 3 Mins not more then 5 Mins
Strain & Squeeze Excess water
Green chilies – 2
Coconut Chunks – 3 Tbsp
Ginger – 1 Tbsp
Curry Leaves – 1 Sprig
Coriander Leaves – 2 Tbsp
Cumin Seeds – 1 Tsp
Curd – 1/3rd cup + 1 Tsp
Rice Flour – ½ Cup
Salt to taste
Crushed Black pepper – ½ Tsp
OIL – for Deep Frying

Best Served with Coconut Chutney

Vada is a category of Savory fried snacks native to India. Vada's can be described as fritters, cutlets. Vada's are traditionally serves with sambhar or chutney. It is also known as Medu Vada Medu means soft in Kannada & Tamil. The basic Vada is prepared with soaking lentil that is urad dal & grinding them to a fluffy batter. But today I have shared a Vada recipe prepared using Puffed Rice / Murmura.
This is a very simple & easy recipe which does not require soaking for long hours & grinding. This can be prepared in 10 mins with some basic ingredients that is curd, rice flour, green chilies, curry leaves etc.
You can prepare this for evening snacks or also as for kids lunchbox.
Tips:
1 Do not soak for more then 5 minutes as this will tend to be soggy & lose its texture
2 Do not over mix or knead the dough as this will tend to turn hard
3 when you fry the Vada's the oil should not be too hot nor warm. Fry them on a medium heat stirring occasionally this helps to give you crunchy crispy Vada's from out & soft bread texture from inside.
Note: when you make a hole its absolutely ok to have cracks as this dough is not a smooth mixture.
