Ingredients for noodles cutlets -
• Maggie Noodles 2 packets
• Cauliflower 1 cup
• Cabbage 1 cup
• Peas ½ cup
• Carrot 1 cup
• Capsicum ½ cup
• Potatoes 2 boiled
• Ginger 1 tbsp
• Green chilies 3
• Red chili powder 1 tsp
• Salt as per taste
• Chopped coriander ¼ cup
For coating-
• Bread crumbs 1 cup
• Maida ¼ cup
• Cornflour ¼ cup
• Salt ½ tsp
• Pepper ½ tsp
• Water as per requirement
How to make noodles cutlets-
1. Crush Maggie noodles into small pieces.
2. Chopp all the vegetables finely.
3. Heat 1 liter of water in a pan. Add cabbage, cauliflower, peas, and capsicum. Let it come to a boil.
4. Add crushed noodles and cook until everything gets soft.
5. Transfer into a strainer and let it come to room temperature.
6. Into cooked vegetables and Maggie, add boiled potatoes, crushed ginger, green chilies, red chilies powder, salt to taste, and chopped coriander. Mash until everything combines well.
7. Now in another bowl make cornflower and maida slurry by adding salt, pepper, and water.
8. Grease palms with little oil. Make 1 cm thick cutlets. Dip into maida slurry and coat into bread crumbs.
9. Shallow fry into the oil until cutlets get golden and crispy.
10. Serve hot Maggie noodles cutlets with tomato ketchup and green chutney.
