Granola & Energy Balls Recipe:
If you are feeling energetic, pre-actívate your nuts and seeds by soaking 7 hours or overnight. They are then dried either in a dehydrator or an oven at no more than 65 degrees. Note the exception of Brazil nuts, which don’t need soaking. This process does take time so if it puts you off altogether, forget it! Activated nuts or not, this is still unprocessed granola where you control the proportions of goodness and much better than anything you buy in a packet.

Brazil nuts 1/2 cup (no soaking needed)
Hazelnuts 2/3 cup
Walnuts 1.5 cups
Almonds 2/3 cup
Pumpkin seeds 1/3 cup
Linseed and chia seeds milled 1/3 cup (I don’t activate these because they’re hard to drain and some physical acid is ok)
Dedicated coconut 1/2
Oats 2 cups
Buckwheat groats 1/2 cup (A complete protein). I don’t soak these because they’re already low in phytic acid but soaking is good if you have the inclination, to release nutrients).

Melt in a bowl inside a pan of hot water:
Coconut oil 180g (or this quantity can be made using butter & olive oil)
90% or more Dark cooking chocolate
Coconut sugar to taste

Now combine the wet and dry ingredients in a large bowl and add more coconut oil / sugar to taste.

Before cooking your granola in the oven, keep by 1.5 cups of the mixture for the energy balls:

Add 2 large eggs beaten to your energy ball mixture
1/2 cup almond flour or more to get the right consistency

Cook at 150 degrees centigrade for about 40 minutes, stirring occasionally and when out of the oven, add a couple of handfuls of goji berries to the granola.

Store the granola and the energy balls in the fridge and consume within a week.

When later roasted in the oven for the granola, it’s true that the activated nuts do lose some of their proteins and vitamins but they are still superior, especially as the oven is not super hot for this baking. They will however, no longer be raw.
