Beef Tikka Rice Platter

Ingredients for Beef Tikka:
Beef boneless (cubes) 1 kg
Yogurt 1 cup
Ginger garlic paste 2 tbsp
Tikka masala 2 ½ tbsp.
Red chili flakes 1 tbsp
Salt 1 tsp
Papaya paste 1 ½ tbsp.
Lemon juice 1 tbsp
Oil (for cooking) 3 tbsp
Heated charcoal (for smoke) 1 piece
Oil (for smoke) 1 tsp

Ingredients for Biryani Rice:
Oil 3 tbsp
Onion (chopped) 1 cup
Cumin seeds 1 tbsp
Star anise 2
Black cardamom 2-3
Whole black peppercorns 1 tsp
Water 5 cups
Salt 1 tbsp
Red chili powder 1 tsp
Soaked rice 3 cups
Green coriander (Chopped) as required
Lemon slices as required
Green chilies as required
Yellow food color few drops
Orange food color few drops
Kewra water 1 tsp

Ingredients for Grilled Veggies:
Oil 2 tbsp
Tomatoes (half cut) as required
Green chilies (half cut) as required
Onion (half cut) as required

Directions for Beef Tikka Preparation:
1. In a bowl add beef, yogurt, ginger garlic paste, tikka masala, red chili flakes, salt, papaya paste, lemon juice and mix it well. Marinate it for 1 hour.
2. In a pan heat oil and marinated beef. Cook for 4-5 mins. Now cover and cook for 25-30 mins or until beef is fully done.
3. Now place a heated charcoal in aluminum in the center of the pan. Drizzle oil on it and cover the pan with lid. Let it smoke for 1 min. Your Beef Tikka is ready. Set aside.
Directions for Biryani Rice Preparation:
4. In a pot heat oil and add onion. Cook until translucent. Add cumin seeds, star anise, black cardamom, whole black peppercorns and cook for a minute.
5. Add water, salt, red chili powder and bring it to a boil. Add rice and cook until 80% water dries out.
6. Now add green coriander, lemon slices, yellow food color, orange food color, kewra water and cover and steam over low flame for 10-12 mins. Set aside.
Directions for Grilled Veggies Preparation:
7. In a pan heat oil and place half cut tomatoes, onion, green chilies. Grill each side until brown in color.
8. Now serve the veggies with prepared Beef Tikka and Biryani Rice. Your Beef Tikka Rice Platter is ready.
