Kothukari Parotta:
Ingredients:
1, Parotta - 12 nos bought from hotel | To be shredded
2, Mustard seeds, Channa dal & Urad dal - As required
3, Onions - 5 nos
4, Turmeric Powder - 1/4tsp
5, Curry leaves - As required
6, Tomatoes - 4 nos
7, Cooked Minced Mutton - 400 gms | Cook the meat seperately in a cooker with curry leaves, turmeric - 1/4tsp, chilli powder - 1/2tsp and salt as required for 5 whistles.
8, Chilli powder - 1 1/2tsp
9, Salt - As required
10, Gravy given along with the parotta from the hotel
11, Pepper - 2tsp
12, Coriander leaves - 1 cup or as required

Once the oil is heated on the kadai, fry the mustard seeds, channa dal and urad dal. Add in the onions. Once the onions are cooked, put in the turmeric powder. Then add in the curry leaves. Add in the tomatoes once the onions get golden brown. Let the tomatoes cook well. Add in the salt once the tomatoes are cooked well in paste / thokku consistency (When the oil seperates). Add in the chilli powder. Add in the Minced mutton into the kadai. Once the minced meat is marinated well with the contents, check the spiciness & salt and whatever is required. Now pour in a cups of gravy which came along with the parotta on to the kadai. Add in one more cup of the gravy along with 2tsp of pepper or as required. Let it cook nicely. Add in the shredded parotta on the kadai and mix well. Once the parotta is mixed well onto the contents, check for any dryness on the parotta and add some more gravy as required. Once you add in the parotta, the spiciness may reduce, so check and add pepper as per your requirement and then at last add in the coriander leaves and curry leaves and stir well. And the delicious kothukari parotta is ready to be devoured.
