Smash Burgers

The most important part of a smash burger is the sauce. Because the meat is smashed thin and only seasoned with salt and pepper, a flavourful sauce is an absolute must.

Because the burgers cook so fast, you have to have everything prepared in advance.

I used a sweet onion but a white onion or a shallot would also be good. If you only have a red onion, add it to the patties after you smash them and fry normally, otherwise the red onion is too strong and overpowering.

Roll the meat into a loose ball, don’t roll as if you’re making meatballs. You want the meat loose so it spreads easier.

Don’t add the meat until the pan is smoking. There’s no need to add oil as the meat will release fat and liquid.

This recipe makes two smash burgers (with double patties).

Ingredients:
200-220g lean ground beef
2-4 slices of processed cheese
salt and pepper to taste

2 brioche buns

Optional toppings:
Tomato
Onion (white or sweet)
Pickles
Lettuce

Sauce:
1 small pickle (or pickle juice)
3 tbsp mayonnaise
1 tbsp ketchup
1 tbsp mustard
½ tsp garlic powder
½ tsp onion powder
salt and pepper to taste

Instructions:
1. Divide the meat into four 50-55g pieces, loosely roll into balls, and refrigerate.
2. Thinly slice tomato, onion, and, if needed, pickles/lettuce to fit the burger.
3. Unwrap the cheese slices.
4. To prep the sauce, chop the pickle finely or add 1 tsp pickle juice to a small bowl.
5. To the same small bowl, add the rest of the sauce ingredients and stir to combine everything. Taste and adjust the ingredients, if necessary.
6. Place a non-stick frying pan or griddle over low heat and toast the buns. Once the buns are toasted, turn the heat up to medium-high and let the pan heat.
7. Meanwhile, spread the sauce on both sides of the bun, then layer the lettuce, tomatoes, pickle and onion.
8. When the pan is smoking hot, add two meatballs. Press down hard to flatten, season with salt and pepper, and cook for 1 minute.
9. Flip, season again, and add cheese slice to one patty. Cook for another minute.
10. Turn off the heat and stack the patties on the prepared bun, add the top and press down to smoosh.
11. Enjoy!
