This week, we test out our perception of what oxidation in beer really tastes like. Check out this video about a forced oxidation experiment in homebrewed beer.

Mike took a sample of his Red Lager that we tasted on camera before and poured it into two pitchers. He sloshed that beer back and forth a bit to encourage oxygen pick-up from the ambient air. He then left that beer out for a couple hours.

Mike then poured the beer into an unpurged keg and sealed it up. Let the keg sit with a heat wrap on it overnight. Then, he chilled the keg down and carbonated it just like the original Red Lager sample in the fridge.

We tasted these side by side. Interestingly we both noted a muted hop character as well as less elegant malt profile to the beer. It is very interesting to note that this was a relatively quick oxidation period. If we hold on to the doctored sample for more time, maybe the differences will be more pronounced.
