RECIPE:

▫️1 1/4 cup sweetened condensed milk
▫️1/2 cup biscoff cookie butter
▫️1/2 cup apple butter (go less if it’s better for you)
▫️1 tsp vanilla
▫️1/2 tsp diamond kosher salt (or 1/8-1/4 tsp any other brand kosher salt)
▫️1 1/2 cups heavy cream, whipped until stiff peaks

▫️Biscoff cookies for mix-in and topping
▫️Apple butter for swirling (I did about 1/3 cup)

In a mixing bowl, combine the sweetened condensed milk, cookie butter, apple butter, vanilla and salt. Mix with a hand mixer on medium speed until combined.

In another mixing bowl, whip the heavy cream until stiff peaks form.

Combine the cookie butter custard mixture and the heavy cream. Mix on low speed until combined, then transfer to a container. Mix in cookie crumbs (size of your choice.) Then, top 4-6 tbsp of with apple butter and swirl into the ice cream base with a spoon. Top with more cookie crumbs, then cover and freeze overnight.
