Hi semua! Dalam video ni saya akan kongsikan cara saya sediakan roti burger homemade yang gebu, lembut tanpa menggunakan mixer. Saya gunakan dua jenis tepung untuk resepi ni iaitu tepung roti (tepung berprotein tinggi) dan tepung gandum. Tepung roti mempunyai kandungan protein yang lebih tinggi, penting untuk pembentukan gluten yang menganjalkan dan meringankan tekstur roti. Tapi tepung roti ni agak ringan dan kurang rasa, jadi saya campur dengan tepung gandum supaya rasa roti lebih sedap. Resepi ni menghasilkan anggaran 9 atau 10 biji roti burger.

BAHAN-BAHAN:
2 cawan tepung roti | 250 gram
1 1/2 cawan tepung gandum | 180 gram
1 sudu besar yis kering (pastikan masih aktif) | 8.5 gram
1/4 cawan gula pasir | 50 gram
1 sudu teh garam halus | 6 gram
1 sudu besar minyak sayuran | 13.6 gram
2 sudu besar mentega/marjerin (cairkan dan biarkan sejuk) | 28.4 gram
1 cawan + 1 sudu besar susu segar suam | 243 gram
1 biji telur gred A

HIASAN:
sedikit putih telur
Bijan putih secukupnya

*TIPS:
Kalau tak pasti sama ada yis yang digunakan masih aktif atau tak, campurkan yis kering dengan gula pasir dan susu suam. Biarkan selama 5 hingga 10 minit hingga yis mengembang. Kemudian, campur campuran yis bersama bahan lain.
Sesuaikan kuantiti susu yang digunakan, kalau pakai telur yang lebih kecil, tambah lagi sedikit kuantiti susu hingga adunan boleh dibentuk menjadi doh.

In this video I'll share on how I make burger buns that is fluffy even without a mixer. I combined between two types of flour- bread and wheat or plain flour. Bread flour contains higher protein ratio that'll make your bun fluffy, light and airy but it lacks in taste, that's why I combined with wheat flour to enhance the bun's taste. This recipe yield 9 or 10 pieces of burger buns.

INGREDIENTS:
2 cups of bread flour | 250 grams
1 1/2 cups of wheat/plain flour | 180 grams
1/4 cup of white sugar | 50 grams
1 tablespoon of dry yeast | 8.5 grams
1 teaspoon of fine salt | 6 grams
1 tablespoon of vegetable oil |13.6 grams
2 tablespoons of melted, cooled butter | 28.4 grams
1 cup + 1 tablespoon of lukewarm milk | 243 grams
1 large egg

TOPPING:
A small amount of egg white
White sesame seeds as needed

*TIPS:
If you're unsure whether your dry yeast is still active, combine the yeast with lukewarm milk and sugar, let sit for 5 to 10 minutes until it bubbled. The, combine yeast mixture with the remaining ingredients.
You may need to adjust the amount of milk added until the mixture achieved the right consistency to form a dough.
