Picnicking and outdoor gatherings are almost here. If a jello poke-hole cake isn't part of that gathering, it should be. Delightfully cute, and easy to make, it's no wonder they show up so frequently during the summer.

Ingredients:
1 white cake mix and the required ingredients
1 4-serving box of jello in your favorite colors or flavors
1 tub of your favorite white frosting

Heat oven to the required temperature. Spray only the bottom of a 9x13-inch cake pan with non-stick cooking. Line the bottom with parchment paper for easier removal. Mix and bake the cake according to the package directions.

Let the cake cool in the pan for 30 minutes. It should still be warm when you add the jello. Mix 2 tablespoons, 28g, of each color of gelatin with 2 tablespoons, 30ml, boiling water, one at a time. You can either use a skewer and poke dozens of holes all over the cake, then pour the colors randomly over the cake. Or you can use an eye dropper and add the colors while poking the holes. Wash the eye dropper inside and out, thoroughly, between colors.

Cool the cake completely in the refrigerator for at least 4 hours or preferably overnight. Frost with your favorite icing and serve cold.
