oil will separate and the halwa will not stick to the pan ,that sholud be the consistency of the halwa
Ingredients:
Maida / All purpose flour – 2 cups
Nuts of your choice (I used cashew nuts and pumpkin seeds)
Sugar – 2½ cups
Food colour – ¼ tsp (I used orange colour)
Coconut oil / Sunflower oil – 3½ cups

Steps:
Add 10 cups of water to 2 cups of maida and mix well.
Leave it covered for 2 days to ferment.
Strain and discard the solids.

Heat a pan and add 2 cups of water.
Add food colour and mix well.
Add half of the sugar to the pan.
Let it melt.
Once the water boils, add 1¼ cup oil.
Add the maida mixture.
Keep stirring continuously.
Once it starts to thicken, add 1½ cup oil and mix well.
Add the remaining sugar.
Reduce the flame when you add oil.
Then increase the flame and keep stirring.
Add 1 cup oil.
When oil starts to separate, add nuts.
Cook stirring for another ½ hour.
Remember to stir the whole time.
Switch off once the mixture thickens well.
It took me around 2 hours to get the halwa done.

Remove the excess oil using a dry utensil.

Add some nuts to a cake tin/pan.
Transfer the hot mixture to the pan.
Smoothen the surface.
Let it cool.
Invert and cut the Kozhikode halwa.
It tastes better after a couple of days.
