冬瓜薏米淡菜蝦乾魷魚湯
Dried baby green mussels and dried sea prawns squid soup with winter melon and barley

消暑袪濕湯
冬瓜薏米淡菜蝦乾魷魚湯

材料:
冬瓜1斤
薏米1兩
淡菜2兩
土魷1隻
蝦乾20隻
薑2片

處理:
1. 土魷、蝦乾及淡菜,清水浸1小時。
2. 薏米,清水浸20分鐘至軟身,沖洗乾淨,擎乾水。
3. 冬瓜,清水洗乾淨表皮,切一舊舊。
4. 土魷,除去內臟,清水沖洗乾淨。
5. 蝦乾,清水沖洗乾淨。
6. 淡菜,除去雜質,清水洗乾淨。
7. 魷魚,切開一條條。

烹調:
1. 白鑊,烘乾薏米,放碗內。
2. 大火燒熱油半湯匙,爆香薑片,加入魷魚、淡菜及蝦乾,炒勻至聞到香味,轉大火,加入大滾水1升,加入薏米及冬瓜,大火滾起,冚蓋,轉中慢火,煲15分鐘。
3. 完成,可享用。

Ingredients:
Winter melon 1 catty
Barley 1 tael
Dried baby green mussels 2 taels
Dried squid 1 No.
Dried sea prawns 20 Nos.
Ginger 2 slices

Preparation:
1. The squid, dried sea prawns and dried baby green mussels, soak in tap water for an hour.
2. The barley, soak in tap water for 20 minutes until it turns soft. Rinse with tap water. Drain.
3. The melon, rinse its skin. Cut in pieces.
4. The squid, remove intestines. Rinse with tap water.
5. Dried sea prawns, rinse with tap water.
6. Dried baby green mussels, remove impurities. Rinse with tap water.
7. The squid, get it shredded.

Steps:
1. Plain wok, dry the barley up. Put in a bowl.
2. Heat up 0.5 tbsp of oil at high flame in wok. Fry ginger well. Add in squid, dried baby green mussels, and dried sea prawns. Fry well until you can feel the scent. Turn to high flame. Add in 1L of boiled-up water. Add in barley and winter melon. Heat up at high flame. Cover up the wok. Turn to medium-low flame and boil for 15 minutes.
3. Complete. Serve.
