Spooky Herb & Veggie Casserole

Ingredients:

3 cups pumpkin, peeled and cubed (fresh or canned, but fresh is firmer)
5 cups of smashed potatoes
2 peeled and chopped medium parsnips
1/2 cup cooked red quinoa
1 cup cooked black beans (or 1 tin, drained and rinsed)
1.5 cups of chopped mushrooms
1/2 cup chopped kale
1/2 cup chopped spinach
1 finely chopped onion
3 minced cloves garlic
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 tsp ground coriander/cilantro
1/2 tsp turmeric
1/4 tsp freshly ground black pepper
Juice of one lime

Topping:

Cumin
Garlic powder
Chilli powder
Fresh parsley or cilantro as garnish


Instructions:

1. Preheat your oven to 400°F (200°C).
2. Spread the cubed pumpkin and chopped parsnips on a baking sheet lined with parchment paper (no oil needed). If you want, season with black pepper.
3. Roast for 25-30 minutes, or until the vegetables are tender and lightly caramelized. Flip them halfway through for even roasting.
4. In a large pan or pot, add the chopped onion and garlic and sauté over medium heat with a few tablespoons of water, stirring occasionally. Cook for about 5-6 minutes until the onion becomes soft and translucent.
5. Add the mushrooms and sauté for 10 minutes or until tender.
6. Take the pot/pan off the heat and add the cumin, smoked paprika, coriander, turmeric and black pepper. Stir well.
7. In a large mixing bowl, combine the cooked quinoa, roasted pumpkin, roasted parsnips, black beans, the onion-garlic-spice mixture, kale, spinach and lime juice. Stir everything together well, making sure the spices are evenly distributed.
8. Transfer the mixture into a lightly water-spritzed or parchment-lined baking dish.
9. Top with mashed potatoes and ghost-shaped potato slices and sprinkle with garlic powder.
10. Bake the casserole in the oven at 375°F (190°C) for about 15-20 minutes to allow the flavours to meld and firm up.
11. Once baked, remove from the oven and let it cool for a few minutes to firm up further.
12. Garnish with fresh parsley or cilantro and serve warm.
