Kosha Mangsho- Bengali style slow cooked Mutton Gravy...

Kosha Mangsho as the name suggests Bhuna Ghosht/ Mutton (primarily Goat, however can be made of Lamb too). This recipe gets its uniqueness by the slow cooking process which results into a flavourful rich gravy and melt-in-the mouth mutton pieces.
So lets make it and enjoy!!!

Ingredients:
1 Kg Mutton
And PATIENCE.. to slow cook it for around 90- 100 minutes

To Marinate Mutton:
1 large Onion (roughly chopped)
1 Inch Ginger
6-7 cloves of Garlic
2 Green Chillies
2 tblspn Curd
1/2 tspn turmeric
1 tspn Chilly powder
1 tblspn Mustard Oil

Tempering:
3 Bay leaves
4 Dry Red Chillies (whole)
5- 6 Green Cardamom
2 Brown Cardamom
10 Cloves
4 small piece of Cinnamon Sticks

For Gravy:
2 tblspn Mustard Oil
5 Onions (thinly sliced)
1 Inch Ginger (crushed)
8 pods of Garlic (crushed)
2 Green chillies (crushed)
1/2 tspn Turmeric
2 tspn Chilly Powder
1 tspn Cumin Powder
1 1/2 tspn Corriander Powder
1 tspn Bengali Garam masala (green cardamom + Cinnamon + Cloves)
3 large Potatoes (though optional)
2 tspn Sugar
Salt to taste
Hot water as required

Garnishing:
3 Green chillies
1 tspn full of Ghee
1 tspn Bengali Garam Masala
(Note: Ghee used in this dish is Cow Ghee from Bengal, hence it has dark brown colour and has a grainy texture)
