I love tacos! And rice! And cheese! And one pot meals! So it’s only natural that I absolutely love this

One Pot Taco Rice

Brown 1 lb of ground beef with 1 diced onion and 3-4 minced garlic cloves. Add 1 packet of taco seasoning. Stir in one cup of long grain white rice. Toast for a few minutes. Add an 8 oz can of tomato sauce, a 10 oz can of Rotel and 1.5 cups of chicken or beef broth. Let that come to a gentle boil. Put the lid on. Reduce heat to a simmer and cook for 15-20 minutes. Stir it up and make sure the rice is cooked. Top with 8 oz of grated cheese ( I used Monterey Jack) and place under the broiler until the cheese is melted. Top with your favorite toppings and enjoy!
