Delhi Style Matar Kulcha Recipe | Chole Kulcha | दिल्ली स्टाइल मटर कुलचा | Street Food Recipe
Ingredients :
For Kulcha Dough:-
1.5 cup Wheat Flour
1.5 tsp Baking Powder
2 tsp Sugar
Salt as per taste
1/4 cup Sour Curd (Khatta Dahi)
1 tbs Oil
Water (as required)
For Matar:-
1 cup White Peas (soaked overnight)
1/2 cup Water
Salt as per taste
2 Cloves, 1 Bay Leaf & 1/2 tsp Haldi
Chopped Onion, Tomatoes, Ginger and Green Chilli
For Chutney:-
Big bunch of Coriander in
Handful of Mint Leaves
1 small Ginger Knob
Green Chillies (as per taste)
3-4 Ice Cubes
Salt to taste
For Magic Masala:-
2 tsp Kashmiri Red Chilli Powder
1 tsp Black Salt
1 tsp Coriander Seeds Powder
1/2 tsp Cumin Powder
Pinch of Black Pepper Powder
1 tsp Chaat Masala
For Tamarind Pulp:-
1 tbs Tamarind
1/4 cup warm Water
Black Sesame Seeds & Chopped Coriander (to sprinkle)
Butter
To Garnish:-
Chopped Onion, Tomatoess, Coriander & Ginger Juliennes
Lemon Juice
Method :
To Knead Dough:-
Take 1.5 cup Wheat Flour, 1.5 tsp Baking Powder, 2 tsp Sugar & Salt per taste
Add 1/4 cup Sour Curd (Khatta Dahi), 1 tbs Oil & Water gradually and knead a soft dough
Apply a little Oil on dough and leave for 30-60 min
To Make Matar:-
Take 1 cup soaked White Peas in a pressure cooker
Add 1/2 cup Water., Salt, 2 Cloves, 1 Bay Leaf & 1/2 tsp Haldi
Pressure cook up to 2 whistles
To Make Chutney:-
Take a big bunch of Coriander in a mixer jar
Add handful of Mint Leaves, 1 small Ginger Knob , few Green Chille , 3-4 Ice Cubes & Salt to taste
And churn to a fine chutney.
To Make Magic Masala:-
In a small bowl, take 2 tsp Kashmiri Red Chilli Powder, 1 tsp Black Salt, 1 tsp Coriander Seeds Powder, 1/2 tsp Cumin Powder, a pinch of Black Pepper Powder, 1 tsp Chaat Masala.
Mix it well and keep aside
Take 1 tbs Tamarind in a small bowl to make pulp, Soak it in 1/4 cup warm Water
Squeeze the mixture with hands, strain it and keep aside
To Make Kulcha:-
Further roll out few balls from the dough prepared & Flatten with hands
Sprinkle some Black Sesame Seeds & Chopped Coriander
Dust some dry flour and flatten with the roller pin (thickness of Kulcha should be as aloo paratha)
Place kulcha on the heated pan, Drizzle water around once you see bubbles on kulcha
Cover the lid and let the kulcha cook, Flip it and cook for another 2-3 min
Take it on a wire rack and apply Butter on it
To do final plating-
take boiled Matar in a mixing bowl
Add 2 tsp Masala prepared
Add finely chopped Onion, Tomatoes, Ginger and Green Chilli , approx 3 tbs Imli Pulp, 2-3 spoon Green Chutney & chopped Coriander
While serving, garnish matar with chopped Onion, Tomatoess, Coriander & Ginger Juliennes
Squeeze a Lemon Juice on it
