INGREDIENTS:

For yakhni masala:

1 tsp peppercorns
1 tsp fennel seeds
1 tsp cumin seeds
4 Cloves
Small piece of cinnamon
2 cardamom pods
1 tbsp coriander seeds
5 Nos Kashmiri chilli


For yakhni sauce:

One cup Curd
1/4 cup cashews (soaked in hot water for an hour)
5 cubes of paneer


For Fried paneer and veggies:

250 gram paneer
2 tsp ghee
1 large onion petals
1 small capsicum diced
1 medium tomato diced(deseeded)
A small piece of ginger chopped


For yakhni Paneer:

2 tbsp oil
2 tbsp Ghee
1 bay leaf
Half tsp cumin seeds
Finely ground paste of curd Cashew and paneer
1 tsp ginger garlic paste
2.5 tsp prepared yakhni masala
1 cup water
Salt to taste
Fresh cream 1/4 cup
2 pinch of kasuri methi

Instructions:

1: Preparation of yakhni masala:

To a heated pan add all the spices and roast on medium flame for a minute. Transfer to a plate and let it cool down,once the ingredients have cooled down Transfer to a mixer jar and grind it coarsely and keep it aside .

2: For yakhni sauce:

Add curd ,5 cubes of paneer and soaked cashews to a mixer jar and grind it to a fine paste. Keep it aside .

3:For frying paneer and veggies:

In a pan add 2 tsp ghee and paneer. Keep the flame on medium. Roast the paneer on one side. Once they have turned to a golden brown colour flip it to the other side . Remove from the pan and keep it aside. To the same pan add onion petals ,along with capsicum and tomato . Roast on medium flame for about 2 minutes.Keep it aside .

4:For yakhni Paneer curry:

In a kadhai add oil along with ghee .Add cumin seeds and bay leaf and saute on low flame for few seconds, then add finely ground paste (yakhni sauce).Keep the flame low,stir for about three minutes. After three minutes add ginger garlic paste and mix it,continue to cook for another 3 minutes till the raw smell goes off.
Add 2-3 tsp of prepared yakhni masala powder along with salt ,mix it well. Add water and mix everything well and cook for fuve minutes. After 5 minutes add fried paneer and veggies along with malai or fresh cream and mix well .Cover it and cook on low flame for about 5 minutes. After 5 minutes add kasuri methi and mix it well . Rich paneer yakhni is ready to serve hot. Serve with roti,chapati or steamed rice.
