This is a recipe for a deep fried sweet potato vada. Usually they are made with regular potatoes but I used a sweet potato in this recipe. I hope you enjoy it!!


INGREDIENTS:

1 sweet potato
1 potato
1/8 tsp turmeric
1 tsp cumin powder
1 tsp green masala (green chili, ginger, garlic paste)
½ tsp salt
juice from ¼ lemon
fresh coriander

FOR BATTER:
¾ cup chickpea flour (besan)
1/8 tsp turmeric
¼ tsp cayenne pepper
½ tsp salt
pinch of baking soda
½ cup water
oil for frying


METHOD:

Pressure cook the sweet potato and potato until they are soft. You can also boil if you wish.

Peel and mash the potatoes together.

Mix in 1/8 tsp turmeric, 1 tsp cumin powder, 1 tsp green masala, ½ tsp salt, juice from ¼ lemon and fresh chopped coriander.

Cover and refrigerate to harden so you can roll into balls easier.

For the batter mix the besan, turmeric, cayenne pepper, salt and baking soda together. Add the water and stir until you get a thick batter.

Roll the potato mixture into small balls.

Heat a pot with oil to 300°F.

Dip each potato ball into the batter and coat and fry in oil until cooked and golden brown.
A great snack to have with some chai. Enjoy!!
