Written recipe :

Ingredients:
———————

For mutton marination:
—————————————
👉🏻Mutton boneless 300 gms
(Washed and keep it in strainer for half an hour )

👉🏻Salt (namak) 1 tsp
👉🏻Red chili powder (lal mirch )1 tsp
👉🏻Turmeric powder (haldi) 1/2 tsp
👉🏻Ginger garlic paste (adrak lehsun paste) 1 tsp
👉🏻Lemon juice (nimbo pani) 1 large

Marinate mutton for at least 2 hrs

In a non sticking pan add

👉🏻2 tbsp cooking oil

Add marinated mutton cook until tender
Without adding any water , cover and cook


Take it aside


For dry spices we need :

👉🏻Cumin (zeera ) 1 tsp
👉🏻Mustard (rai) 1 tsp
👉🏻Coriander seed (sabit dhaniya) 1 tsp
👉🏻Fenugreek (meethi dana) 1/4 tsp
👉🏻Nigella (kalonji) 1/4 tsp

Dry roast all above ingredients
And in that we are adding

👉🏻Allspice (Kabab chini) 8-10
👉🏻Cardamom (elichi) 5-6
👉🏻Cloves (Laung) 5-6
👉🏻Cinnamon (dal chini ) 1 inch

Make a fine powder of all above dry spices


Now for tampering we need :

👉🏻Cooking oil 7-8 tbsp
👉🏻Cumin (zeera) 1 tsp
👉🏻Mustard (rai) 1 tsp
👉🏻Garlic cloves (lehsun) 8-10
👉🏻Curry leaves (curry patta) 8-10
👉🏻Fenugreek seeds (Meethi dana) 1/4 tsp
👉🏻Nigella seed (kalonji) 1/4 tsp
👉🏻Dried red chili (sukhi lal mirch) 3

In a tampering pan add 7-8 tbsp oil
Add all above tampering ingredients
Tamper for 1 min add this to fried mutton cubes

Then we are going to add:

👉🏻Salt (namak) 1 tsp
👉🏻Red chili powder (lal mirch) 2 full tsp
👉🏻Dry spices powder
Mix it all together
Switch on the flame and cook for 1 min

Mutton pickle is ready
Let it cool down

👉🏻Add 1 large lemon juice (nimbo pani)
Mix it

Keep it in air tight contaio
You can enjoy it for 1 month
