mocktail recipe:

for the simple syrup:
2 cups tomatoes
1/2 cup maple syrup
1/4 cup fresh basil
1/2 cup water

1. blend all ingredients above until smooth, then transfer to a saucepan over medium high heat. bring to a boil then simmer 5-10 minutes, until thickened. remove from heat to cool.
2. strain the simple syrup mixture.
3. to assemble, combine the simple syrup with 2 tbsp orange juice or lemon juice, and sparkling water or tequila alternative to taste.
glass rims garnished with honey and tajin!

summer salad recipe:

1. i just finely chopped all the ingredients below and tossed in a balsamic dijon vinaigrette with thinly sliced shallots!
