Chicken Dum Biryani in Telugu | చికెన్ దం బిర్యానీ | Restaurant Style Chicken Biryani😋| World Famous

For cooking rice & Dum cooking :
1 & 1/2 kg basmati rice soaked for 30 minutes
1 kg grams chicken skinned and cut into pieces
1 tb cup ghee to use as needed
1 cup sliced onions
1/4 cup cashew nuts
3 tbsp raisins
1/4 cup chopped mint, coriander leaves
Marinate the Chicken1/2 cup plain curd yogurt
1 tsp chilli powder
1/4 tsp turmeric powder
3 flakes of garlic
Biryani Masala
1 tsp oil (required)
Salt as needed

Preparation :
Clean chicken: Give your chicken a good wash and pat it dry.
Fry onions: Slice onions and fry them until they're golden brown. Once cooled, crush them - with your hands. Set aside some of the oil for later.
Prep the spices: Grind green cardamom seeds into a powder. Finely chop coriander leaves and roughly chop mint leaves. Crush green chilies.

Process :
Soak the rice in water for about 30 minutes.
Boil plenty of salted water in your pan. Add spices like cumin seeds, cardamom, cloves, and cinnamon for extra flavor.
Layer it up:
Spread half the cooked rice in the bottom of your pan.
Add a layer of fried onions and mint leaves.
Top it off with the remaining cooked rice.
Pour a mixture of hot rice water and ghee over the rice.
Seal it up and cook it slow:
Cover the pan tightly with foil and then the lid.
Cook on high heat for 10 minutes, then put it on a tawa (or skillet) and lower the heat.
Let it cook slowly (dum) for 30 minutes.
Rest and enjoy:
Let the biryani rest for an hour before opening the lid.
Gently mix everything together and serve hot!
