Hey guys. Today, I want to share with you how my Nanay (Mom) used to cook adobo plus my way of cooking it.
Adobo is one of the comfort foods in the Philippines.

From Puerto Princesa City, Palawan (Philippines), my parents bought a bukid - farm in a small remote town also in Palawan and we moved there.
Growing up, meat and other commodities were like luxury in that place - no market, everything was from scratch. Whenever we were having meat especially pork, it was often of a wild pig (boar) from a distant neighbor. Nanay would then make this adobo and add some cassavas to make it looked like larger in amount and would be enough for us - her kids.
Cassavas were readily available because we have them in our backyard.
Spices were also rare, most often just soy sauce and coconut vinegar (langgaw) for adobo - very basic.
Oh life is so hard sa bukid!

In the meantime, I spotted some cassavas while doing our groceries here in Canada and suddenly remembered my Nanay’s adobo.
So here I am, recreating it in honor of my Nanay. I love you and I miss you, wherever you are.
This is my Nanay’s and my way of cooking it.
Cooking time takes only 20-25 minutes using pork belly.
