Ingredients:
For lamb shank:
• 2 kilos lamb shanks
• 8 cardamom pods
• 8 cloves
• 2 star anessed
• 3 dried lemon
• 4 Bay leaves
• 1 cinnamon stick
• 1 tbsp of peppercorn
• 1 onion
• 1 carrot
For glazing after boiling :
• 1 tbsp mansaf spices
• 1 tbsp salt to taste( or more)
• 1 tbsp black pepper
• 3 tbsp oil to make a paste
Rice:
• 2 finely chopped onion
• 500 g minced lamb
• 3 tbsp ghee
• 3 cups basmati rice
• 2 tbsp mansaf spices
• 1 tsp pepper
• Salt to taste
• 1/2 tsp cinnamon powder
gravy sauce:
• 2 tbsp ghee or butter
• 2 tbsp flour
• 1 tsp mansaf spices
• 1/2 tsp pepperpepper
• Salt to taste
• 1/4 tsp cinnamon powder
