A packing house is a facility where the fruit is received and processed prior to distribution to the market.

Although the packing house example above is rather simplistic, large producers commonly employ much more extensive controls through the wash, pack, and ship operations as shown in the above video, whereas other packers either ignore or simply do not care about much more than getting the product to market.

In the postharvest system the packing house grades fruit and places it in packs for shipping. Fruit is graded on a number of attributes such as size, color, firmness, number of defects, and dry matter.

Growers are paid according to the quality profile of the product packed.
It is important that fresh foods are shipped quickly and handled efficiently. Refrigerated trucks, railroad cars, and cargo ships are the modes of transportation used, throughout the shipping stage, food products need to be carefully loaded and protected to prevent damage from a wide assortment of potential hazards.

An enhanced traceability system of the product helps the grower to gain marginal cost from the packer. The system also then provides a traceability dataset that can be aggregated to any higher level, as may be required by other users of this information
