When we spend time at my mom’s house, I still want Makai to have the same nourishing, from-scratch meals he eats at home—so I stocked her freezer with healthy breakfasts, dinners, snacks, and even some naturally sweet treats.
Everything is homemade using simple, whole ingredients—some even harvested from our garden. I made banana pancakes, sweet potato brownies, fruit-only roll-ups, split pea soup, and a fresh basil pesto. These meals are toddler-friendly, budget-friendly, and full of love.
As a holistic, herbal-minded mom, this is one way I stay grounded in our values of slow, simple living—even when we’re away from home. If you’re looking for ways to feed your little one real food on a budget, or just want to see how we prep ahead as a frugal family, I hope this video inspires you.

Recipes:
Pesto:
2 cups of basil, kale, cilantro, or spinach
½-1 cup of nuts
1 lemon + 1 tsp of lemon zest
¼ cup of oil
¼ cup of nutritional yeast
2 cloves of garlic
Dash of salt and pepper
chop garlic and add everything together and blend. Optional to add water or pasta water to make it thinner

Banana Pancakes:
3 large bananas
Chai seed egg (2 tbsp of chai seeds + ¼ cup of water)
1 1/4 cup of oatmilk
1.5 tsp of vanilla
¼ cup of melted coconut oil
2.5 cups of wholewheat flour
2 tbsp of baking powder
make chai seed egg & set aside. Mash bananas and add all other wet ingredients. If you want the pancakes more sweet add a dash of maple syrup. Mixtogether dry ingredients and then combine the wet and dry ingredients. Cook on frying pan in coconut oil.

Sweet potato brownies:
2 large sweet potatoes peeled diced and cooked
½ cup cocoa powder
1 cup oat flour
Dash of salt salt
1/2 cup pure maple syrup,
½ cup coconut oil
2 tsp baking powder
blend all ingredients together and bake at 350 for 20 mins

Chickpea ‘chicken’ nuggets:
1/4 cup breadcrumbs
¼ cup oat flour
1/2 cup rolled oats
⅓ cup of shredded carrots
2 cup chickpeas
¼ cup of nutritional yeast
3 tbsp of tahini
¼ of water
Dash of salt & pepper
1 teaspoon garlic powder
1 teaspoon onion powder
blend all ingredients together except oatflour and the bread crumbs. In a separate bowl mix together bread crumbs, oat flour, and a dash of nutritional yeast. Optional just to use oat flour. Once the mixture is blended form the dough into chicken nugget size and press each nugget into the breadcrumb mixture and place on a baking sheet. Bake at 375 for 18- 20 minutes


Split pea soup:
1 onion
2 cloves of garlic
2 carrots chopped
3 celery stocks chopped
3 cups of green split peas
1 tbp of olive oil
4 cups of veggie broth
2 tbp of garlic powder
2 tbp of onion powder
3 bay leaves
1 tbp of parsley
1 tbp of oregano
1 cup of water

cut up all your ingredients. In a pot saute onions with 1 tbp of olive oil (or water) until golden brown. Turn down heat to low and cook garlic for 1 minute. Add rest of your ingridents and bring to a boil. Once it reaches a rolling boil turn down and let it simmer for 30-45 minutes until split peas are fully cooked. Stir occasionally to prevent anything sticking to the bottem of the pot. Once cooked, turn off heat and (optional) blend mixture with imersion blender.
