Ingredients
1 Box of Jumbo Shells
3 Garlic cloves
1/2 Onion
1 Pack of Spinach
1lb of shrimp, peeled, deveined cut into bite size pieces
8oz of Lump Crab Meat
8oz of Claw Crab Meat
2 Cups of Ricotta Cheese
2 Packs of Italian Cheese Shredded
2 Cups of Parmesan Cheese
1 Quart of Half and Half
1 Stick of butter (1/2 stick for Cream Sauce)
2 Tablespoons of Flour
Cajun Seasonings, Garlic Powder, Maggie’s Fish Seasoning & Black Pepper to Taste
Instructions
1. Preheat the oven to 350 degrees. Bring a large pot of salted water to a boil. While the water is coming to a boil, mince the garlic, chop the onions and set both aside.
2. Chop the shrimp into bite size pieces, place it in a large bowl, season to your liking and set aside. Bring the water to a boil, cook the pasta for five minutes, then drain and rinse in cool water. While the pasta is cooking, bring 1-2 Tablespoons of butter to a medium heat in a skillet and saute the garlic and onions for 2-3 minutes, add shrimp and cook for another 3 mins. Add to large bowl and set aside.
3. Sauté spinach in the same skillet for about a minute or until wilted the add to the bowl with the shrimp. Add ricotta cheese, 1c shredded cheese, 1/2 cup Parmesan cheese to that bowl, then stir until all of the ingredients are thoroughly incorporated. Add lump crab then gently fold into mixture.
4. In a large skillet, bring the half stick of butter to a medium heat, then add flour. Stir for about 1 minute to get the raw flour taste out. Add half and half a little at a time, whisking constantly. Once sauce has thickened add claw crab meat and let simmer for about 2 mins. Then, add your cheeses and season to taste.
5. Add a layer of Alfredo sauce on the bottom of your baking pan. Fill each shell with the seafood mixture and place the shells into a baking pan. Cover the stuffed shells with remaining Alfredo sauce. Top it with cheese and bake for about 20 to 25 minutes.
6. Remove the shells from the oven, plate and enjoy.
