Summary
Servo mode AF acts as you would expect traditional 'continuous auto focus' to act.
One Shot AF is quiet different and confused me started out because of the Green box that indicates the subject is in focus.

However what this actually does is freeze the focus in that spot, allowing you to recompose your image if you wish before capturing your photo.

After watching this video take our your camera and play around with both SERVO and ONE SHOT mode in regular M (manual) mode and then do the same in VIDEO mode and get familiar with the way they behave, so that when your out shooting your using the right setting for the right job.

p.s I've not found ONE SHOT mode better suited even if my subject is still, I prefer SERVO mode whenever I need autofocus.
