We are big fans of pizza on Friday nights! I adapted our favorite recipe (thanks, mom-in-law!) to freshly milled flour for a nutrition and flavor boost. You can also make this with all purpose flour--I've done it countless times!

Recipe--yields 2 pizzas:
2 Tbsp yeast
2 cups warm water
2 tsp sugar
2 tsp salt
4 Tbsp oil
4-6 cups flour (I use hard red wheat; all purpose also works)
Pizza sauce
Cheese
Toppings

Mix the yeast and warm water; sit aside. Add the sugar, salt, and oil to your mixer or mixing bowl (this recipe can be made in your mixer or by hand). Stir in one cup of flour at a time until the dough can be kneaded without sticking to your hands or the bowl. Knead well. The dough should be smooth. Cover your dough and let it rise for 15 minutes.
Preheat your oven and cast iron skillets or pizza pans to 425°F.
Divide the dough into two parts.
When the oven and pans are hot, remove them and coat with oil. Add and shape your pizza dough. Bake the crust for 10 minutes. Remove the pans from the oven and add your sauce, cheese, and toppings. Return the pans to the oven for another 5-10 minutes or until the cheese is melted and the crust is brown. Optionally, you can use the broiler to brown and melt the cheese.
