G is for Gnocchi 🥔

First of all… I'm NOT sponsored by the scale in the video, but I DID link it in my Amazon store for anyone interested. It's literally the cheapest one I could find, I've used it for 6 years, and if you're seriously trying to learn how to cook, a cheap scale is going to help you a TON. I use it for cookies, pizza dough, pasta dough, basically anything with flour.

Second... this recipe is fantastic. I have made gnocchi a handful of times and it's always a pain. You have to bake the potatoes for a while, then burn your hands peeling them, then buy a potato ricer that doesn't even work, then add too much flour, or too little, only to find out after the gnocchi are cooked and then there is a giant mess to clean up… and the gnocchi don't even taste better than store bought ones.

That's why I was super excited to share this recipe with you!

RECIPE for 2 servings

-Start with 500g of potatoes (I prefer gold, but russet work too… don't use red skin potatoes)

-Peel, GRATE (Shredding doesn't work), and strain out as much liquid as you can.

*I recommend grating over a cloth napkin or paper towels to make the straining easier*

-However much strained potato you are left with… add HALF the weight in all purpose flour, 1 large egg, and a pinch of salt.

*For example… if you have 210g of strained potatoes, add 105g of ap flour. If you squeezed out a bit more water and only had 190g then add 95g of flour*

-Use one of the techniques shown in the video, but don't worry about rushing. The dumplings will sink when you put them into the water and float when they are done cooking. You have a decent few minute window after they float before they are “overdone.” These gnocchi are very forgiving.

-For the sauce, use some speck (smoked pork leg)... pancetta would be a preferred substitute, or thick cut bacon.

-Cut the meat into strips and fry till golden brown. Then melt some butter, brown it for 3-4 minutes and then mix together with the gnocchi.

-And Enjoy!
