Don't put unripe tomatoes on your window sill for days on end. Make chutney with them! 1 kg of tomatoes = 1kg of chutney.

Ingredients

1 kg (2¼ lb) green tomatoes, chopped
400 ml (14 fl oz) vinegar
200 g (7 oz) brown sugar
200 g (7 oz) shallots or onions, finely chopped
100 g (3½ oz) raisins or sultanas
1 large cooking apple, peeled, cored and diced
1½ tsp salt
1 tsp ground black pepper


Instructions

Add all the ingredients into a large pan and bring gently to the boil.
Simmer gently for 1½ to 2 hours, stirring from time to time.
The mixture will darken and thicken. It’s ready when you can see the bottom of the pan when you draw a spoon or spatula through.
Pour the hot chutney into clean, sterile jars and seal with a clean and sterile lid. Date and label.

Titli's Tips
The quatities here make about 1 kg (2.2 lb) of chutney. Allow to mature for 2-3 months. Goes great with cheese and cold meats!
