Feni is a traditional and popular alcoholic beverage in the Indian state of Goa. It is distilled from either cashew apples or coconut sap. The process of making Feni involves several steps. For coconut Feni, the sap of the coconut tree, known as toddy or neera, is collected by tapping the coconut flower buds. For making cashew feni and coconut feni cashew apple juice or coconut toddy is allowed to naturally ferment for a few days. The fermented toddy is then distilled to produce coconut Feni.
The traditional method of distillation involves the use of earthen pots or copper stills, although modern stainless steel equipment may also be used. In this distillery, they are using copper stills. The entire process of making Feni is often a family or community affair, with traditional methods passed down through generations. Feni is enjoyed in various ways, either neat or in cocktails, and it has become a symbol of Goan culture.
