How to make Enchiladas ROJAS | AUTHENTIC Enchiladas recipe from Michoacán | Villa Cocina

One of the most distinctive characteristics of Mexican culture is its food. This recipe is a great presentation of what you would expect from such a rich and vast menu that has been perfected through the years. Red enchiladas is such a crowd favorite dish. There are a handful of versions depending on the region, but in this video I am presenting them to you just the way I grew up eating and enjoying them. This is such an authentic, delicious and inexpensive recipe with which I want to share with you my love for my Mexican heritage.

Red Enchiladas Recipe

🔴 For the red enchilada sauce
8 ea chiles guajillos
2 cups warm chicken broth
2 ea garlic cloves
1 1/2 tsp dry Mexican oregano
1 cup of water (add gradually)
Salt to taste

🐣To cook the chicken
1.5 lbs of chicken drumsticks (10 pcs)
12 cups of water
Small bunch of cilantro
1/4 ea medium white onion
2 sprigs mint or hierba buena leafs
3 ea garlic cloves
Salt to taste

🍅 For the tomato Mexican salsa
4 ea or 1 lb roma tomatos
1 ea jalapeño
1 ea garlic
1/4 white onion
Salt to taste

⭐️Additional items you will need:
CORN tortillas
Olive oil or you could also use lard if desired

Filling
1/2 ea medium white onion
24 oz of queso fresco

Additional items you will need as toppings:
Cabbage or iceberg lettuce (wash & drain)
Pickled jalapeños
Mexican style cream
