Besan Paratha; an amazingly delicious version of #StuffedParatha from Punjabi Cuisine. This #BesanParatha is made with wheat flour and stuffed with a besan filling made with aromatic spices and masalas. Besan Paratha Recipe:

For Dough:

Wheat Flour (Atta) - 2 Cups
Water - ¾ Cup
Salt - ½ tsp

For Stuffing:

Besan (Gram Flour) - ¾ Cup
Turmeric Powder - ½ tsp
Coriander Powder - 1 tsp
Red Chilli Powder - ½ tsp
Onion (finely chopped) - 2 tbsp
Coriander Seeds (crushed) - 1 tsp
Fennel Seeds - 1 tsp
Cumin Seeds - 1 tsp
Green Chillies (chopped) - 1 no
Ginger (chopped) - 1 tbsp
Salt - ½ tsp
Ghee - 1 tbsp
Dry Mango Powder - 1 tsp
Coriander Leaves (chopped) - 2 tbsp
Ghee - As Needed

Cooking Instructions:

1. Knead a smooth and semi-firm dough using the flour, salt and water. Rest for 10 mins.

2. Dry roast the besan for 4 mins on a medium flame. Transfer to a bowl.

3. Add the remaining ingredients and mix well with ghee to get a crumbly slightly moist mixture and set aside.

4. Stuff the dough with the besan mixture, by dividing the dough into roundels. Dust in flour and flatten a little with your fingertips. Place the mixture in the center and seal the edges by pinching together and dust in flour again and rest for 5 minutes. Roll the roundels flat, gently.

5. Alternatively, flatten two roundels and place some besan mixture in the center of one, use the other to place on top and seal the edges, rest for 5 minutes and roll the paratha to the required thickness, gently.

6. Cook on a preheated tava on medium heat, applying ghee and till golden brown on both sides.
