* 2 Cups Cake Flour

* 2 cups granulated sugar
* 3 large eggs (Room Temp)
* 3/4 cup canola oil
* 3/4 cup buttermilk
* 1 1/2 TSP vanilla
* 8 oz crushed pineapple (undrained)
* 2 cups shredded carrots
* 1 1/4 cup shredded sweetened coconut
* 1 1/4 cup chopped walnuts
Simple Syrup:
* 1/2 cup granulated sugar
* 5 TBSP Unsalted butter
* 1 TSP Vanilla
* 1/4 cup buttermilk
Cream Cheese Frosting:
* 1 stick unsalted butter softened
* 8 oz block cream cheese softened
* 32oz bag powdered sugar
* 1 TBSP Vanilla
* 1/4 cup heavy whipping cream
