Chicken and Rice Soup:

SERVES 4

1 1/2 pounds chicken thighs or chicken breasts
4 tbsp butter, divided
1/2 cup diced carrots
1/2 cup diced white onion
1/2 cup diced celery
2 teaspoons minced garlic
Season to taste with kosher salt, black pepper, onion powder, garlic powder, smoked paprika
6 cups chicken broth
1 bay leaf
1 - 10.5 ounce can of Cream of Chicken
2 1/4 cup white rice (sorry for typo in video)
