● Ingredients:

½ cup (125g) heavy cream
½ cup (125g) milk
2 tbsp (30g) sugar
three small egg yolks (50g)
1 ½ sheet of gelatin (3g)
1 ⅓ cup (235g) milk chocolate
¾ cup (190g) cold heavy cream

● Steps:

1. Whip the cold heavy cream on medium speed until soft peaks form. Keep it in the fridge until ready to use.

2. Partially melt the chocolate in the microwave and set aside.

3. Hydrate the gelatin in cold water.

4. Mix egg yolks and sugar.

5. Bring to a boil milk and heavy cream. Pour over the egg mix, stirring constantly. Strain and return to the saucepan. Cook on medium-low heat until it reaches 83-84°C (181-183°F). It’s ready when it’s coating the back of the spoon and it leaves a path when finger drawn across.

6. Add the gelatin. Pour it over the chocolate and let it sit for a minute. Blend with a handmixer until smooth.

7. When it cools down to ~95°F (35°C), mix it with the whipped cream.

● Tips:

1. Keep it in the fridge one hour before serving.
